At the heart of the Dalmatian Peka lies a combination of simple, yet flavorful ingredients. Typically, the dish starts with succulent pieces of locally sourced meat, such as lamb, veal, chicken, or octopus, marinated with fragrant herbs and spices like rosemary, garlic, bay leaves, and black pepper. To complement the meat, an array of fresh vegetables, including potatoes, onions, bell peppers, and tomatoes, are added to create a harmonious blend of textures and tastes.



The Peka


The key to the Dalmatian Peka cooking method is the traditional peka iron lid, a unique domed vessel made from cast iron. This ingenious design allows the dish to be cooked in two stages, both on an open fire and then buried under hot coals, creating an oven-like environment that locks in the flavors and moisture, resulting in tender, mouthwatering dishes.


The Dalmatian Peka cooking process begins with building a wood fire to generate the necessary amount of coals. Once the fire reaches its prime, the peka pot is placed directly on the flames to heat the base. The marinated meat and vegetables are then carefully arranged on the hot base, and the deep lid is placed on top, sealing the pot. The edges of the pot are then covered with hot coals, while the remaining coals are spread evenly across the lid. This ingenious technique ensures that the heat is distributed evenly, allowing the ingredients to cook slowly and absorb the aromatic flavors.
